This recipe is a family favourite at my house. It is so quick to prepare, it is healthy and my family LOVE it.
Fajitas are a great mid-week meal, they are also great for a casual mexican dinner party. They should be smokey, they should be eaten hot and fresh and they should be shared!
Now, these fajitas can be made using beef, chicken, lamb or mushrooms. It is so versatile!
Just a note on the use of barbecue sauce: barbecue sauce packs a huge punch of flavour and saves a lot of time mixing and preparing all the spices needed. Masterfoods make a ‘Smokey BBQ’ sauce, which is fabulous for this recipe.

Cooking Time: 10 mins
Serves: A hungry family of 5
Ingredients
10+ tortillas
500g beef, finely sliced
1 red capsicum, finely sliced
2 onions, finely sliced
Olive oil for frying
Marinade:
1/4 cup of smokey bbq sauce (or regular bbq sauce with 1/2 tsp smoked paprika)
2 cloves of garlic, crushed
2 tsp ground coriander
1 tsp ground cumin
1 tsp smokey paprika or sweet hungarian paprika
1 tbsp olive oil
Salt and Pepper
1/4 tsp chilli (optional)
Salad:
Lettuce, tomatoes, cucumber, carrot and avacado are fabulous.
Condiments:
200ml sour cream
More smokey bbq sauce
Sweet Chilli Sauce
Method
1. In a large bowl add the bbq sauce and all the spices and olive oil. Add your finely sliced meat and set aside.
2. Cut all your salad ingredients and arrange on a plate or platter for the centre of the table. Get all your condiments ready. Mr Cool loves to add a mix of bbq sauce and sweet chilli sauce, a spicey sweet texmex kind of thing… worth a try!
3. Cut your capsicum and onions. Heat a pan with a good splash of olive oil until it is hot. Add the capsicum and onions, cooking for a few minutes until the onions soften and you are getting some colour on the capsicum. Add the meat and quickly fry until just cooked.
4. Heat your tortillas and put the cooked meat mixture into a big bowl. Put everything on the table and enjoy your mexican feast!
