Gluten Free Chocolate Crackles

When it came time to start planning for Miss A’s birthday party, we found out that one of her little friends is Gluten Intolerant. Miss A has food allergies, so I know how hard it can sometimes be to accept birthday invitations, as they always come with a phone call where I have to ask about the ingredients in food. So… I decided that this party would be completely gluten free. How hard could it be? I googled and talked to friends who were gluten free, and found that it is really not that hard!

I asked for some ideas on facebook and a friend suggested these, Gluten Free Chocolate Crackles. Easy, tasty and the girls LOVED them! No-one even realised that the food was gluten free (except for one little girl who knew she could eat everything on the party table!)

Gluten Free Chocolate Crackles

Prep Time: 20mins

Chilling Time: 2 hours

Makes: 15 BIG chocolate crackles

 

Ingredients

Muffin-sized patty pans

200g copha

50g butter

1 cup gluten free icing mixture

1/4 cup cocoa powder

4 cups gluten free rice bubbles

 

Method

1. Arrange large patty pan liners (I used muffin liners) on a baking tray.

2. Melt the copha and butter in a large saucepan. Sift in the icing sugar and cocoa powder. Mix until you have no lumps.

3. Stir in the rice-bubbles making sure everything is coated.

4. Spoon into the patty pan liners, about 2 tbsp in each should do it.

5. Chill in the fridge until you are ready to serve. They keep well in the fridge in an air-tight container for a couple of days.

Variations

  • You can add some other bits and pieces to chocolate crackles - just make sure you choose gluten free ingredients!
  • Things Like:
  • Marshmallows, Smarties, Toasted Coconut, Hundreds and Thousands, Gluten Free Rocky Road, you can even drizzle the tops with melted gluten free white chocolate…
  • You could experiment with flavours too… add some peppermint essence or orange zest

  2. According to the little girls’ mum, it was the FIRST party she had ever been to where she could eat EVERYTHING. I thought that was a bit sad, but I was really pleased I took the time. I expect the same when my little girl goes to a party after all, she has serious anaphylactic allergies - very scary indeed!

  3. I’m sure you were that little girl’s hero that day B!! For Lior’s party I made everything dairy and sugar free for him. I figured that you should be able to eat everything at your own birthday party! No one else minded at all!
