I love a sweet and sour combination and this is one of my favourite desserts, especially when the lemon tree is overflowing with juicy lemons. I can’t lie, this dessert is very sweet and rich but totally delicious. Here’s how you can make it.
Lemon Delight
Ingredients:
1 can of condensed milk
3/4 cup of lemon juice
1 egg yolk
Method:
Pour condensed milk into a bowl and aerate with an electric beater.
Slowly add the lemon juice whilst still mixing.
Once combined add the egg yolk and continue mixing until thickened.
Divide mixture into dessert glasses and refrigerate for 2 hours.
Garnish with lemon zest.
Optional: Before placing the mixture in bowls you can fold through 200ml of whipped cream. This will make it go a bit further and reduce the sweetness a little bit.
