There’s no such thing as a plain iced cupcake these days. Long gone are the days when you made a quick batch of cupcakes, a bit of icing and topped with your favourite sprinkles or 100s and 1000s. My kids have been getting these plain chocolate cupcakes in their lunchbox this week, uniced but I decided they should have something a little more special for afternoon tea.

Using cookies or using the crumbs in the frosting to decorate cupcakes is also very popular. I picked up a couple boxes of marked down Strawberry Oreos at the supermarket a little while ago. My kids aren’t that keen on Oreos as they are but they love eating the crumbs (which are made by blitzing the cookies in a food processor for a couple minutes, cream and all) with half a cookie topping the cake.

I used my No Fuss Chocolate Fudge Cake which is just the easiest recipe going. No eggs, no dairy, no fuss, no worries. I use it just about every time I make a cake. You can add a cookie to the bottom of the cupcake paper for an added crunch or add crumbled cookies to the cake mixture before baking.

You don’t even really need to pipe the frosting onto the cupcake. Just spread any way you like.

Strawberry Oreo Cupcakes

(Makes 12 large)

Cupcakes:

  • 1 and half cups plain flour
  • 3 tablespoons cocoa
  • 1 cup sugar
  • 1 cup water
  • 1 teaspoon vanilla
  • 1 tablespoon white vinegar
  • 6 tablespoons oil (I used canola)
  • 1 teaspoon bicarb soda
  • half teaspoon salt

Frosting:

  • 2 cups icing sugar (powdered sugar)
  • 2 tablespoons butter, softened
  • couple drops pink food colouring
  • 2 tablespoons milkd (approx)
  • 1 box Strawberry Oreo cookies (or similar)
  1. Preheat oven to 170 deg C (approx 350 deg F).
  2. Line cupcake pan with cupcakes papers.
  3. Mix plain flour, cocoa, sugar and bicarb soda together in a mixing bowl.
  4. Add water, vanilla, oil and vinegar.
  5. Mix well.
  6. Fill cupcake papers 3/4 full. Bake for approximately 20 minutes or until a skewer inserted comes out clean.
  7. Allow to cool.
  8. Mix all frosting ingredients together.
  9. Pipe or spread frosting onto cooled cupcakes.
  10. Blitz approximately 4 cookies in a food processor until fine crumbs are formed. Either add the crumbs to the frosting or sprinkle them on top.
  11. Break the remaining cookies in half and place on top of the cupcake.

You can do this with any flavour cupcake, any flavour frosting or any type of cookie. Drizzle melted chocolate or caramel or similar on top of the frosting to match the flavour of the cake and cookies. You’ll have heaps of fun make a plain old cupcake into something fancy for your kids or a special morning tea.
