I don’t advocate buying packet mixes of anything but I do buy cheap, homebrand packet cake mixes for my children’s birthday cakes. While they’re young I’ve found they only eat the frosting so its a waste to use 3 eggs, all that butter and other ingredients only to have it thrown away.

Both of my children’s birthdays are in November and I think I overbought on the cake mixes. I’m still finding them in the back of the pantry. I needed something in a hurry for afternoon tea so decided to whip up this easy cake. I’ve always got a frozen, overripe banana in the freezer for that quick banana cake. The cake mix was a chocolate one so the 3 Ingredient Chocolate Banana Cake was born.

3 Ingredient Chocolate Banana Cake

An easy, 3 ingredient cake using a packet mix, 1 banana and egg. More like a Brownie than a cake.
Ingredients
  • 1 packet/box cake mix (chocolate for this recipe)
  • 1 egg, beaten
  • 1 overripe banana, mashed
  • frosting and sprinkles to finish

Instructions
  1. Preheat oven to 180 deg C (375 deg F).
  2. Grease and line a 28x18cm slice tin (or any cake pan you like).
  3. Mix all ingredients together. (Mix will be quite stiff.)
  4. Bake for approx 20 mins. Insert a skewer to check if cake is cooked.
  5. Allow to cool and finish with frosting and sprinkles, as desired.
