When my girlfriend phones and says “write this down, I’d like you try this chocolate brownie recipe”, who am I to argue? Chocolate brownies aren’t something I bake on a regular basis. I’d just prefer a plain old chocolate cake or crunchy chocolate slice but was prepared to give this one a go, on my friend’s recommendation.

You see, she got the recipe from the Fat Witch Bakery Cookbook. The Fat Witch Bakery in New York City became famous for their decadent chocolate brownie when it became one of Oprah’s Favourite Things. (It was probably already famous amongst their customers.) There is a huge amount of butter in this recipe and it’s not what I would traditionally think a brownie is and this is chewy on the inside and crunchy on the outside. This brownie was more like a dense fudge-y cake with a light crisp shell on the outside. Bit like a chocolate lava pudding that had set (that is, not runny inside like it should be). Either way, it is very rich and very nice and should be enjoyed in small quantities. I cut mine in super small pieces but the kids still finished up having 2 pieces at a time anyway. Hope you give it a try.

Fat Witch NYC Legendary Chocolate Brownie

A rich, decadent fudge-like chocolate brownie.
Ingredients
  • 220gm butter, unsalted
  • ½ cup + 2 tbs dark chocolate chips
  • 1¼ cup castor sugar
  • 4 large eggs
  • 1 tsp vanilla
  • ½ cup + 2 tbs plain flour, sifted
  • pinch salt

Instructions
  1. Melt butter and chocolate chips.
  2. Add sugar and stir until dissolved.
  3. Beat in each egg, one at a time.
  4. Add vanilla.
  5. Sift in flour and salt.
  6. Bake in a square (18cm) cake pan at 180 deg C (375 deg F) for approx 30 mins.
