Sometimes I look into my fridge and wonder what can I feed to my kids. Sure, there’s always plenty there. Tinned pineapple, cream cheese spread on crackers or plain old Ginger Nut (or Ginger Snap) biscuits. But when you ‘think outside the square’ sometimes, you might just have a light bulb moment to put them all together and make these cute little Mini Pineapple Cheesecakes with a Ginger Nut crust.

The crust of these cheesecakes are made from Ginger Nut biscuits. You can make your own or use store bought. Its just a matter of putting them in a lightly greased cupcake pan, putting in a 180 deg oven for about 10 mins until they soften. Remove from the oven and gently press, using a spoon, into a case shape.

You could add powdered or crystalised ginger for a more adult version but we, as in me and my boy (not the fussy one because it had pineapple in it) loved them. These would make a cute addition to any formal high tea tiered plate or with a cuppa with friends.

Mini Pineapple Cheesecakes with Ginger Nut Crust

An easy mini pineapple flavoured cheesecake piped into a Ginger Nut biscuit crust.
Ingredients
  • 12 Ginger Nut biscuits
  • 125gm cream cheese spread (or normal cream cheese, softened)
  • 125ml cream, lightly whipped
  • 125gm crushed pineapple
  • ½ tsp ground ginger or 1 tbs finely chopped crystallised ginger (optional)

Instructions
  1. Heat oven to 180 deg C (375 deg F).
  2. Place biscuits on top of cupcake pan or semi circle cupcake pan and bake for approx 10 mins or until soft.
  3. Remove from oven and press gently into ‘cup’ shape with a teaspoon.
  4. Beat lightly whipped cream with cream cheese until firm.
  5. Fold in crushed pineapple (and ginger if desired).
  6. Pipe or spoon onto biscuit crusts.
  7. Refrigerate until required.
