Pineapple, Coconut & Yoghurt Cake
Once you get to know me, you’ll soon start to realise that what I cook depends on what I’ve got that’s taking up space in my pantry, fridge or freezer. I never go out and buy ingredients especially for a recipe. I had 3 rings of canned pineapple in its juice leftover in the fridge plus one cup of yoghurt. I usually like to bake a sweet treat for lunch boxes or afternoon tea after school so I went looking for a pineapple yoghurt combination cake of some sort.
I found this one and adjusted it to use the ingredients I had. I like to bake cakes in cupcake papers or a rectangular slice pan so I have a lot of little squares for little fingers (and big mouths). I’m also a huge fan of using yoghurt in cakes. It makes a beautifully moist cake but its not too heavy or dense.
- 1 cup full fat Greek yoghurt
- 3-4 slices pineapple, finely chopped
- ¾ cup sugar
- 3 whole eggs
- ⅓ cup butter, melted
- 1 tsp vanilla extract
- 2 cups flour
- 1½ tsp baking soda
- ¼ tsp salt
- ½ cup coconut
- 2 cups icing sugar
- juice from canned pineapple (if you have it, otherwise use other fruit juice or water - add 1 tbs at a time until you reach the desired consistency)
- 2 tbs softened butter
- couple drops yellow food colouring, optional
- coconut to finish
- Preheat oven to 170 deg C (350 deg F).
- In a large bowl whisk together the yoghurt, sugar, eggs, butter, and vanilla.
- Sift flour, baking soda and salt and fold through yoghurt mixture.
- Add pineapple and coconut and gently fold through.
- Pour into an 18x28cm baking pan lined with baking paper. Alternatively, bake in cupcake papers (or any other size pan).
- Bake for 30 minutes until a toothpick inserted comes out clean. Let cool completely before frosting.
- Combine all frosting ingredients and spread onto cake. Sprinkle with extra coconut to finish.

This was great. I remembered I had a container of yogurt in the freezer no one was eating. I defrosted it. Left out the coconut and pineapple because I was out and used fresh lemon juice in both cake and frosting. Husband loved it. I am looking forward to making it with the pineapple though! Thanks good find!
